Mango Shrikhand (Aamrakhand – Sweetened Mango Yogurt)
Serves 3–4🧂 Ingredients:
Dashari mango pulp – 1 cup (from 2 ripe mangoes)
Hung curd (thick curd) – 1½ cups (strained for 4–5 hours)
Powdered sugar – 3–4 tbsp (adjust to taste)
Cardamom powder – ¼ tsp
Saffron strands – a few (optional, soaked in warm milk)
Chopped pistachios or almonds – for garnish (optional)
🔪 Method:
Prep the Mango:
Peel and slice ripe Dashari mangoes.
Blend the pulp into a smooth purée. Set aside.
Mix the Shrikhand:
In a bowl, whisk hung curd until smooth and creamy.
Add mango pulp, sugar, cardamom powder, and saffron milk.
Mix well until fully combined.
Chill & Serve:
Refrigerate for at least 1 hour.
