Pudina Rice (Mint Flavored Rice)
Ingredients (Serves 2–3):
Cooked rice – 2 cups (cooled)
Fresh mint leaves – 1 cup (tightly packed)
Fresh coriander leaves – ¼ cup
Green chilies – 2
Ginger – 1 inch
Garlic – 3 cloves
Onion – 1 medium (sliced)
Oil – 2 tbsp
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Urad dal (optional) – 1 tsp
Salt – to taste
Lemon juice – 1 tsp (optional)
Method:
1. Make the Mint Paste:
Blend mint, coriander, green chilies, ginger, and garlic into a smooth paste using a little water.
2. Temper the Spices:
Heat oil in a pan. Add mustard seeds, cumin, and urad dal (if using).
Let them splutter, then add sliced onions and sauté until golden.
3. Add the Mint Paste:
Add the prepared mint-coriander paste.
Cook on medium flame until the raw smell disappears and oil separates (4–5 minutes).
4. Mix in the Rice:
Add the cooled cooked rice and salt.
Mix gently until well combined. Cook for 2 more minutes.
Add lemon juice and stir.
