Ingredients (Serves 2):
Beauty pears – 2 (ripe but firm, thinly sliced)
Pomegranate seeds – ¼ cup
Lettuce or arugula – 1 cup
Walnuts – 2 tbsp (toasted)
Feta cheese – 2 tbsp (crumbled, optional)
Honey – 1 tbsp
Lemon juice – 1 tbsp
Olive oil – 1 tbsp
Salt – a pinch
Crushed black pepper – ¼ tsp
Method:
1. Prep the Fruit & Base:
Wash and thinly slice the pears. Soak in cold water with a few drops of lemon juice to prevent browning. Drain before using.
