Aloo Parwal Ki Sabzi (Potato & Hybrid Pointed Gourd Curry)

Ingredients (Serves 3–4):

  • Hybrid pointed gourd (Parwal) – 250g (sliced lengthwise)

  • Potatoes – 2 medium (peeled and chopped)

  • Oil – 2 tbsp

  • Cumin seeds – ½ tsp

  • Asafoetida (hing) – a pinch

  • Turmeric powder – ½ tsp

  • Red chili powder – ½ tsp

  • Coriander powder – 1 tsp

  • Salt – to taste

  • Garam masala – ½ tsp

  • Water – ¼ cup

  • Chopped coriander leaves – for garnish

Method:

  • Prep the Veggies:
    Wash and slice parwal lengthwise. Chop the potatoes into similar-sized wedges.

  • Sauté the Base:
    Heat oil in a pan. Add cumin seeds and hing. Let them sizzle.

  • Cook the Veggies:
    Add parwal and potatoes. Sauté for 3–4 minutes.

  • Spice It Up:
    Add turmeric, chili powder, coriander powder, and salt. Mix well.

  • Cover & Cook:
    Add ¼ cup water, cover the pan, and cook on low flame for 10–12 minutes, stirring occasionally until veggies are soft.

  • Finish:
    Sprinkle garam masala and chopped coriander. Mix gently.

Pairs With:

  • Phulka or roti

  • Steamed rice and dal
