How to make Aloo Gobi – classic dry sabzi with cauliflower and potatoes
 
Ingredients:
Cauliflower (Gobi) – 500g (from Bhole Fruits and Vegetable for ₹63),
2 medium potatoes, mustard seeds, cumin seeds, turmeric, red chili powder, coriander powder, garam masala, salt, oil, ginger, green chili, fresh coriander

Method:
Cut cauliflower into small florets and soak in salted warm water for 5 mins. Peel and cube potatoes.
Heat oil in a pan, add mustard and cumin seeds.
Add grated ginger and green chili, then toss in the potatoes.
Add turmeric, chili powder, coriander powder, and salt. Mix well.
Add cauliflower and mix again. Cover and cook on medium heat till soft.
Sprinkle garam masala and garnish with chopped coriander.
 
Pairs With: Roti, paratha, or curd-rice.
