Ingredients:

Mustard oil, ajwain (carom seeds), turmeric, red chili powder, coriander powder, amchur (dry mango powder), garam masala, saltMethod:
Boil arbi until just tender (don’t overcook). Let it cool, peel, and cut into thick slices or lengthwise strips.
Heat mustard oil until it smokes lightly. Add ajwain and let it sizzle.
Add arbi and toss gently on medium flame until lightly crisped.
Add turmeric, red chili, coriander powder, salt, and cook uncovered, stirring gently.
Once crisp, turn off the heat. Sprinkle amchur and garam masala, toss, and serve.
