Ingredients:
Green Zucchini (Hara Zukini) – 500g (from Bhole Fruits and Vegetable for ₹100)
Cumin seeds, mustard seeds, garlic (optional), green chili, turmeric, red chili powder, salt, oil, fresh coriander

Method:
Wash and cut zucchini into thin half-moons (no need to peel).
Heat oil in a pan. Add mustard seeds and cumin seeds.
Once they splutter, add chopped green chili and garlic (if using).
Add turmeric, red chili powder, and salt. Stir.
Add zucchini slices and cook uncovered on medium flame for 6–8 minutes, stirring occasionally.
Cook until soft but not mushy. Garnish with coriander.
 
Pairs With: Roti, dal, or lemon rice.
