Dish: Ridge Gourd Curry (Torai ki Sabzi)
Ingredients:
500g ridge gourd (peeled and chopped)
1 tbsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 chopped onion
1 chopped tomato
1 green chili (optional)
1/2 tsp turmeric powder
1 tsp coriander powder
Salt to taste
Fresh coriander for garnish
Method:
Prepare Ridge Gourd: Peel the ridge gourd, remove the tough edges, and chop it into small pieces.
Tempering: Heat oil in a pan. Add mustard and cumin seeds. Let them splutter.
Sauté: Add chopped onions and green chili. Sauté until golden.
Add Spices: Add turmeric and coriander powder. Mix well.
Cook: Add tomatoes and cook till soft, then add chopped ridge gourd and salt.
Simmer: Cover and cook on low heat for 10–15 minutes until the ridge gourd is soft and fully cooked.
Garnish: Top with chopped fresh coriander.
Serve hot with roti or plain rice for a simple and wholesome meal.
