Dish: Ridge Gourd Curry (Torai ki Sabzi)

Ingredients:

  • 500g ridge gourd (peeled and chopped)

  • 1 tbsp oil

  • 1/2 tsp mustard seeds

  • 1/2 tsp cumin seeds

  • 1 chopped onion

  • 1 chopped tomato

  • 1 green chili (optional)

  • 1/2 tsp turmeric powder

  • 1 tsp coriander powder

  • Salt to taste

  • Fresh coriander for garnish


Method:

  • Prepare Ridge Gourd: Peel the ridge gourd, remove the tough edges, and chop it into small pieces.

  • Tempering: Heat oil in a pan. Add mustard and cumin seeds. Let them splutter.

  • Sauté: Add chopped onions and green chili. Sauté until golden.

  • Add Spices: Add turmeric and coriander powder. Mix well.

  • Cook: Add tomatoes and cook till soft, then add chopped ridge gourd and salt.

  • Simmer: Cover and cook on low heat for 10–15 minutes until the ridge gourd is soft and fully cooked.

  • Garnish: Top with chopped fresh coriander.


Serve hot with roti or plain rice for a simple and wholesome meal.
