How to make Kaddu ki Sabzi – sweet, spicy, and tangy pumpkin curry (North Indian style)
Ingredients:
Pumpkin (Kaddu) – 500g (from Bhole Fruits and Vegetable for ₹31)
Mustard seeds, cumin seeds, asafoetida (hing), turmeric, red chili powder, coriander powder, amchur (dry mango powder), jaggery (gud), salt, oil, green chiliMethod:
Peel and chop pumpkin into small cubes.
Heat oil in a pan, add mustard seeds, cumin seeds, and a pinch of hing.
Add chopped green chili and turmeric, then toss in the pumpkin.
Add red chili powder, coriander powder, salt, and mix well.
Cover and cook on low-medium flame till soft.
Add jaggery and amchur, mix gently, and cook uncovered for 2–3 minutes.
Pairs With: Poori, paratha, or plain roti.
