How to Make Hydroponic Karela Stir-Fry with Peanuts – Clean, Crunchy, and Wholesome
Ingredients:
Hydroponic bitter gourd (karela) – 3 medium, thinly sliced
Roasted peanuts – 2 tbsp
Green chili – 1, finely chopped
Curry leaves – 6–8
Mustard seeds – ½ tsp
Turmeric powder – ½ tsp
Asafoetida (hing) – a pinch
Salt – to taste
Lemon juice – 1 tsp (optional)
Oil – 1.5 tbsp (preferably mustard or groundnut oil)
Method:
Prep karela:
Slice hydroponic karela thinly (no need to salt or peel excessively since hydroponic produce is less bitter and cleaner). Pat dry if moist.Temper spices:
Heat oil in a pan. Add mustard seeds, let them splutter. Add curry leaves, green chili, and a pinch of hing.Add karela:
Add sliced karela and turmeric. Stir well and cook uncovered on medium-low heat for 10–12 minutes, stirring occasionally.Add peanuts & salt:
Toss in roasted peanuts and salt. Cook for another 3–4 minutes until karela is slightly crisp and golden at the edges.Finish:
Turn off the heat. Drizzle lemon juice if desired for a light tang.
Pairs With:
Steamed rice & dal, khichdi, millet roti, or even as a snack with buttermilk.
