How to Make Mushroom Masala

 

Ingredients (Serves 2–3):

 

  • Button mushrooms – 200g, cleaned & sliced

  • Onions – 2 medium, finely chopped

  • Tomatoes – 2 medium, pureed

  • Ginger-garlic paste – 1 tsp

  • Green chili – 1 (optional), slit

  • Turmeric powder – ¼ tsp

  • Red chili powder – ½ tsp

  • Coriander powder – 1 tsp

  • Garam masala – ½ tsp

  • Kasuri methi – 1 tsp, crushed (optional for aroma)

  • Cream or malai – 1 tbsp (optional, for richness)

  • Salt – to taste

  • Oil or ghee – 2 tbsp

  • Fresh coriander – for garnish

  • Water – ½ to 1 cup (adjust consistency)

 

 Method:

 

1. Prep the mushrooms:

  • Clean mushrooms with a damp cloth or rinse quickly and wipe dry. Slice them.

2. Sauté onions:

  • Heat oil in a pan. Add chopped onions and green chili.

  • Sauté until golden brown.

3. Add ginger-garlic paste:

  • Add and sauté for a minute until raw smell fades.

4. Add tomato puree:

  • Cook for 5–6 minutes until oil separates.

  • Add turmeric, red chili, coriander powder, and salt. Sauté for a minute.

5. Cook mushrooms:

  • Add sliced mushrooms. Stir well and cook for 3–4 minutes until they soften and release water.

6. Add water & simmer:

  • Add ½ to 1 cup water to make gravy. Simmer for 5–7 minutes.

  • Add garam masala and kasuri methi. Stir gently.

7. Finish with cream (optional):

  • Stir in cream for a smooth, restaurant-style finish.

8. Garnish:

  • Fresh coriander leaves

  • A swirl of cream (optional)
