How to Make Karela Aloo Fry at Home – Crispy & Spicy
Ingredients:
Bitter gourd (karela) – 3 medium, thinly sliced
Potato (aloo) – 2 medium, thinly sliced
Turmeric powder – ½ tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Salt – to taste
Mustard oil (or any cooking oil) – 3 tbsp
Method:
Prep veggies: Thinly slice karela and potato. Sprinkle salt and turmeric on karela. Let rest for 20 minutes. Rinse and pat dry.
Sauté potatoes: Heat oil in a pan. Add potato slices and fry until light golden. Remove and set aside.
Cook karela: In the same pan, add karela slices. Fry till edges turn crisp and color darkens slightly.
Combine and spice: Add back the potatoes, sprinkle chili powder and coriander powder. Toss well and cook together for 5 minutes on low flame.
