How to make Kathal ki Sabzi – spiced raw jackfruit curry (North Indian style)
Ingredients:

Mustard oil, bay leaf, cumin seeds, asafoetida (hing), onion, tomato, ginger-garlic paste, turmeric, red chili powder, coriander powder, garam masala, salt, waterMethod:
Oil your hands and knife before cutting jackfruit. Peel skin, remove seeds, and cut into chunks.
Boil kathal pieces until just tender (do not overcook).
Heat mustard oil in a kadhai until it smokes lightly. Add bay leaf, cumin, and a pinch of hing.
Sauté chopped onion until golden. Add ginger-garlic paste and cook for 1 min.
Add tomatoes and all powdered spices. Cook until oil separates.
Add boiled jackfruit, mix well with masala, and cook on low flame for 10 minutes.
Add little water if needed. Finish with garam masala.
