Ingredients: Hybrid tomatoes (Sanjivani Tamatar), onion, ginger-garlic paste, green chili, turmeric, red chili powder, coriander powder, garam masala, oil, salt, fresh coriander
 
Method:
Finely chop onions and hybrid tomatoes.
Heat oil, sauté onions until golden, then add ginger-garlic paste and green chili.
Add spices and stir well.
Add chopped hybrid tomatoes and cook until fully soft and oil separates.
Mash lightly for smooth texture and simmer for 5 more minutes.
Garnish with coriander leaves.
 
Pairs With: Jeera rice, paratha, or used as a base for paneer, eggs, or mixed veg curry.
