Dish: Chinese Garlic Chili Sauce
Ingredients:
100g Chinese garlic (peeled)
6–8 dry red chilies (soaked in warm water)
2 tbsp oil (preferably sesame or vegetable)
1 tsp soy sauce
1 tsp vinegar
Salt to taste
1/2 tsp sugar (optional)
Method:
Blend: In a blender, grind soaked red chilies and garlic into a smooth paste with a little water.
Cook: Heat oil in a pan, add the paste, and cook on low flame for 5–7 minutes until the raw smell disappears.
Season: Add soy sauce, vinegar, salt, and sugar (if using). Cook until oil begins to separate.
Cool & Store: Let it cool and transfer to a sterilized jar.
Use as a dip or stir into noodles, fried rice, or veggies for a bold, spicy kick.
