Creamy Pasta

Ingredients:
Whole wheat pasta – 1 cup (penne, fusilli, or spaghetti)
Non-fat milk – 1½ cups
All-purpose flour (maida) or wheat flour – 1 tablespoon
Olive oil or butter – 1 teaspoon
Garlic – 3 to 4 cloves (finely chopped)
Onion – 1 small (optional, finely chopped)
Mixed vegetables – 1 cup (capsicum, broccoli, corn, mushroom, carrot)
Salt – to taste
Black pepper – ½ teaspoon
Oregano or Italian seasoning – 1 teaspoon
Grated low-fat cheese – 1 tablespoon (optional)
Reserved pasta water – ¼ cup


Method:

  • Boil the Pasta:
    Boil the pasta in salted water according to package instructions. Drain and keep aside. Reserve ¼ cup of pasta water for later use.

  • Cook the Vegetables:
    Heat olive oil in a non-stick pan. Add chopped garlic and onion. Sauté for 1 to 2 minutes until fragrant. Add the mixed vegetables and cook for 3 to 4 minutes until slightly tender.

  • Prepare the White Sauce:
    Move the vegetables to one side of the pan. Add the flour to the empty space and roast for 30 seconds on low heat. Gradually pour in non-fat milk while stirring constantly to avoid lumps. Cook on low flame until the sauce thickens, about 5 to 7 minutes.

  • Mix and Season:
    Add salt, black pepper, and oregano or Italian seasoning. Add the boiled pasta and reserved pasta water. Toss everything together until well coated in the creamy sauce.

  • Add Cheese (Optional):
    Mix in the grated low-fat cheese if using. Stir until it melts and blends into the sauce.
