Dish: Drumstick Sambhar (South Indian Lentil Stew)
Ingredients:
500g drumsticks (cut into 2–3 inch pieces)
1 cup toor dal (split pigeon peas)
1 medium onion (sliced)
1 medium tomato (chopped)
1/2 tsp turmeric powder
Salt to taste
2 tbsp tamarind pulp
2 tsp sambhar powder
Fresh coriander (for garnish)
For Tempering:
1 tbsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 dry red chilies
A pinch of hing (asafoetida)
Few curry leaves
Method:
Cook Dal: Pressure cook toor dal with turmeric and water until soft. Mash and set aside.
Cook Drumsticks: In another pot, boil drumstick pieces with onions, tomatoes, and salt until they soften.
Add Dal & Tamarind: Pour the mashed dal into the pot. Add tamarind pulp and sambhar powder. Simmer for 5–10 minutes.
Temper: Heat oil in a small pan. Add mustard seeds, cumin, red chilies, hing, and curry leaves. Let them crackle.
Finish: Add tempering to the sambhar. Garnish with fresh coriander.
Serve hot with steamed rice and a dollop of ghee for a comforting, protein-rich meal.
