Traditional Recipe: Stuffed Masala Parwal (Bharwa Parwal)
Ingredients:
500g Desi Parwal (Pointed Gourd)
2 tbsp mustard oil (or any cooking oil)
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp red chili powder
2 tsp coriander powder
1 tsp garam masala
1 tsp amchur (dry mango) powder
Salt to taste
1 tbsp gram flour (besan) – optional for thick stuffing
Steps:
Wash and peel the Parwal slightly. Slit each Parwal lengthwise without cutting them into halves.
In a bowl, mix turmeric, chili, coriander, amchur, garam masala, salt, and besan.
Stuff each Parwal with the masala mix.
Heat mustard oil in a pan. Add cumin seeds.
Gently place stuffed Parwal in the pan. Cover and cook on low heat, turning occasionally, until soft and golden brown.
Serve hot with roti, paratha, or rice.
