How to Make Gobi Pulao

 

 Ingredients:

  • Basmati rice – 1 cup (washed and soaked for 15–20 mins)

  • Cauliflower (gobi) – 1½ to 2 cups, small florets

  • Onion – 1 large, thinly sliced

  • Tomato – 1 medium, chopped

  • Green chili – 1, slit

  • Ginger-garlic paste – 1 tsp

  • Green peas – ½ cup (optional)

  • Fresh coriander or mint – for garnish

  • Lemon juice – 1 tsp (optional)

Whole spices:

  • Cumin seeds – ½ tsp

  • Bay leaf – 1

  • Cloves – 2

  • Green cardamom – 2

  • Cinnamon stick – 1 small piece

  • Star anise – 1 (optional)

Ground spices:

  • Turmeric – ¼ tsp

  • Red chili powder – ½ tsp

  • Coriander powder – 1 tsp

  • Garam masala – ½ tsp

  • Salt – to taste

Other:

  • Oil or ghee – 2 tbsp

  • Water – 2 cups

 

 Method:

 

1. Prepare the Cauliflower:

  • Soak gobi florets in hot salted water for 5 mins to clean and soften. Drain and keep aside.

2. Sauté the Base:

  • Heat oil/ghee in a thick-bottomed pot or pressure cooker.

  • Add cumin seeds and whole spices. Let them sizzle.

  • Add sliced onions and sauté until golden brown.

  • Add ginger-garlic paste and green chili. Sauté for 1 min.

  • Add chopped tomato. Cook till soft and pulpy.

3. Add Gobi and Masalas:

  • Add turmeric, chili powder, coriander powder, and salt.

  • Toss in the gobi florets and peas (if using). Mix well.

  • Cook for 3–4 minutes until cauliflower is lightly roasted.

4. Add Rice and Cook:

  • Add soaked, drained rice. Stir gently.

  • Add 2 cups water and mix. Taste and adjust salt.

  • Pressure Cooker: Cook for 1 whistle on medium flame, then turn off and rest for 5 mins.

  • Pan Method: Cover and simmer on low for 12–15 minutes, or until rice and gobi are cooked.

5. Finish & Garnish:

  • Sprinkle garam masala and lemon juice.

  • Fluff the rice gently.

  • Garnish with chopped coriander or mint.
