How to make Stuffed Baby Baingan – Bharwa Baingan (Spicy masala stuffed eggplants)
Ingredients:
Baby Eggplants (Chhota Baingan) – 500g (from Bhole Fruits and Vegetable for ₹42)
Mustard oil, cumin seeds, turmeric, red chili powder, coriander powder, garam masala, amchur powder, salt, crushed peanuts (optional)Method:
Wash and make a deep ‘+’ slit on each baingan without cutting them fully.
In a bowl, mix turmeric, chili powder, coriander powder, garam masala, salt, and amchur. Add crushed peanuts for texture (optional).
Stuff this masala mix into the slit baingans.
Heat mustard oil in a pan. Add cumin seeds and place the stuffed baingans carefully.
Cover and cook on low flame, turning occasionally, until soft and well roasted (about 15–20 mins).
Pairs With: Roti, dal, rice, or even khichdi.
