Dish: Babbu Gosa Stir-Fry (Rustic Style Saag Bhaji)
Ingredients:
500g Babbu Gosa leaves (cleaned and chopped)
2 tbsp mustard oil
4–5 garlic cloves (crushed)
2 green chilies (slit)
1 onion (chopped)
1/2 tsp turmeric powder
Salt to taste
Method:
Prep leaves: Wash Babbu Gosa thoroughly and chop finely.
Sauté aromatics: Heat mustard oil in a pan. Add crushed garlic and green chilies. Sauté till garlic turns golden.
Add onion: Stir in chopped onion and cook until translucent.
Cook saag: Add chopped leaves, turmeric, and salt. Mix well.
Cover and cook: Cook on low flame for 10–12 minutes, stirring occasionally until leaves wilt and water evaporates.
Serve hot with steamed rice or roti.
