Dish: Ash Gourd Curry (Petha ki Sabzi)
Ingredients:
500g ash gourd (peeled, deseeded, and cubed)
1 tbsp oil
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1 green chili (chopped)
1/2 tsp turmeric powder
1 tsp coriander powder
Salt to taste
1/4 cup water
Fresh coriander (for garnish)
Method:
Heat Oil: In a pan, heat oil and add cumin and mustard seeds. Let them splutter.
Add Spices: Add green chili, turmeric, and coriander powder. Stir for a few seconds.
Cook Ash Gourd: Add ash gourd cubes and salt. Mix well.
Simmer: Add water, cover the pan, and cook on low heat for 10–15 minutes until the gourd becomes soft and translucent.
Garnish: Sprinkle fresh coriander before serving.
Serve hot with roti or rice for a light and nutritious meal.
