Dish: Patra (Gujarati-Style Arbi Leaves Rolls)
Ingredients:
8–10 Arbi leaves (medium-sized, washed and trimmed)
1 cup besan (gram flour)
1 tsp ginger-green chili paste
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp jaggery (grated)
1 tsp tamarind paste
Salt to taste
Water (as needed)
2 tbsp oil
1/2 tsp mustard seeds
1/2 tsp sesame seeds
A pinch of hing (asafoetida)
Fresh coriander and grated coconut for garnish
Method:
Make the batter: Mix besan, spices, jaggery, tamarind, salt, and water to make a thick, smooth paste.
Layering leaves: Take one leaf, apply batter evenly on the back side. Place another leaf on top, repeat for 3–4 leaves.
Rolling: Roll tightly from base to tip, then steam for 15–20 minutes.
Cooling and slicing: Let cool, then slice the roll into ½-inch thick rounds.
Tempering: Heat oil, add mustard seeds, sesame seeds, and hing. Add sliced rolls and cook until slightly crispy.
Garnish: Sprinkle fresh coriander and grated coconut before serving.
