Red Rice - 1 kg - One packet of red rice

Red rice, called lal chawal in Hindi, is rice whose grains keep their reddish bran layer. Unlike white rice, it is not polished down to the white grain, so it has a nutty flavour, a slightly chewy texture and a deep red-brown colour on the plate. Cook it like regular rice, though it needs a little more water and time. Rinse it well, then use about 1 part rice to 2 parts water and cook for 25 to 30 minutes, or soak it beforehand to shorten the cooking time. Serve it with dal, fish curry or sabzi, or use it in pulao, khichdi, salads and grain bowls.
