Kerala Matta rice, also known as Red Matta Rice, is an unpolished rice variety from Kerala. It is known for its dense outer bran layer and rich, earthy flavor. To prepare, rinse the rice thoroughly until the water runs clear, then soak for 30 minutes to 1 hour. Cook using either the pressure cooker method with 3.5 to 4 cups of water for 4 to 5 whistles, or the open pot method with 10 to 12 cups of water for 25 to 30 minutes.
