Safed Matar (White Peas / Dried Peas) - 500 gm

Safed matar are dried white peas, one of the everyday pulses of North and West India. If you are wondering what safed matar is called in English, it is white peas or dried peas. The round, pale cream peas have a mild taste and turn soft and creamy when cooked. Safed matar is the base of ragda, the peas curry served with ragda pattice and pani puri in Mumbai, and of the matar served with kulcha in Delhi. It is also used for matar chaat, ghugni and simple home curries. Soak the peas overnight and pressure cook them until soft before using them.
