How to Make Rabri (Traditional North Indian Milk Dessert)

Ingredients (Serves 3–4 portions):

  • Cow milk – 1 liter (full fat recommended)

  • Sugar – 3 to 4 tbsp (adjust to taste)

  • Cardamom powder – ¼ tsp

  • Saffron strands – a few (optional, soaked in 1 tbsp warm milk)

  • Chopped almonds – 1 tbsp

  • Chopped pistachios – 1 tbsp

  • Rose water – ½ tsp (optional)

Method:

Boil Milk:

Pour milk into a wide, heavy-bottomed pan or kadhai.

Bring it to a boil on medium heat, stirring occasionally.

Reduce Milk:

Once it boils, reduce heat to low.

Keep scraping the sides and stirring every few minutes to prevent burning.

As a layer of cream (malai) forms on top, gently push it to the side of the pan.

Repeat this as milk reduces and thickens.

Sweeten & Flavor:

When the milk is reduced to about ⅓ of the original volume:

Add sugar and stir until dissolved.

Add cardamom powder and saffron milk.

Mix gently but do not break the layers of malai completely.

Finish & Chill:

Turn off the heat. Let it cool slightly.

Add chopped nuts and rose water (if using).

Refrigerate for 2–3 hours to chill before serving.

Pairs With:
