Doodh Peda (Milk Fudge Sweet)
Serves: 12–14 pieces

Ingredients:
Full-fat milk – 1 liter (or use 2 cups khoya/mawa for shortcut version)
Sugar – ½ cup (adjust to taste)
Ghee – 1 tbsp
Cardamom powder – ½ tsp
Chopped pistachios or almonds – for garnish (optional)
Saffron strands – a few (optional)
Method:
1. Reduce the Milk:
Pour the milk into a heavy-bottomed pan and bring to a boil.
Lower the heat and simmer, stirring continuously until the milk thickens into a grainy, soft khoya-like consistency (this may take 45–50 mins). Stir often to avoid burning.
(Shortcut: If using readymade khoya, skip this and directly start from Step 2.)
2. Sweeten and Flavor:
Add sugar and stir until it dissolves completely and the mixture thickens further.
Add ghee and continue stirring for 3–5 minutes until the mixture leaves the sides of the pan.
Add cardamom powder and saffron (if using). Mix well.
3. Cool and Shape:
Allow the mixture to cool slightly.
Grease your palms with a little ghee and shape the mixture into small pedas (flat discs).
Garnish each peda with chopped pistachios or almonds.
4. Serve or Store:
Let the pedas set for at least 1 hour.
Store in an airtight container at room temperature for 2 days or in the fridge for up to a week.
