How to Make Desi Ghee (Traditional Indian Clarified Butter)
Ingredients (Yields ~200–250g ghee):
Non fat cow or buffalo milk – 2 liters
Curd – 2 tbsp (as starter)
Ice water – as needed for churning
Optional: 1 tsp methi seeds (for aroma)
Method:
Step 1 – Boil & Cool the Milk:
Boil the milk and let it cool until lukewarm.
Transfer to a large bowl or clay pot.
Add curd and mix well.
Cover and set aside for 6–8 hours (or overnight) to ferment.
You will get thick curd.
Step 2 – Make Butter (Makkhan):
Churn the set curd using a wooden churner (mathani) or blender.
Add some ice water while churning to help separate the butter.
After 5–10 mins, you’ll see white butter (makkhan) separate from the buttermilk.
Scoop out the butter and wash 2–3 times in clean water to remove residual curd.
Step 3 – Heat & Make Ghee:
Add the washed butter to a heavy-bottomed pan.
Heat on medium flame.
The butter will melt and begin to simmer.
Let it cook slowly until it turns golden, and milk solids settle at the bottom.
